Overview:
Latios is an extremely useful pokemon. It has a very large moveset that can keep your opponent on his/her toes, and is easily a pokemon that's easy to fit in on a team.

Sets:

Choice
Breakdown (Latios) (M) @ Choice Specs
EVs: 4 HP / 252 SAtk / 252 Spd
Timid Nature (+Spd, -Atk)
- Draco Meteor
- Thunderbolt
- Psyshock
- Surf

This is Latios's most commonly used set. Right off the bat, I wanna say Scarves can be used as well, and Modest Or Timid Natures can be swapped out appropriately. With Specs, Latios can tear holes into common Specially Defensive walls. With a Scarf, it can outspeed many pokemon faster than it such as Gengar that are usually threats to it. When Scarfed Surf becomes Ice Beam.

Expert Belt
Breakdown (Latios) (M) @ Expert Belt
Trait: Levitate
EVs: 4 HP / 252 SAtk / 252 Spd
Timid Nature (+Spd, -Atk)
- Draco Meteor
- Hidden Power [Fire]
- Psyshock
- Surf

Expert Belts are meant to trick people into thinking that Latios is choiced, so they send out pokemon such as Skarmory to set up. You can swap out Psyshock or HP Fire with Thunderbolt, Shadow Ball, or Energy Ball, depending on the pokemon you have on your team, but this is the standard set.

Calm Mind
Breakdown (Latios) (M) @ Life Orb
Trait: Levitate
EVs: 4 HP / 252 SAtk / 252 Spd
Timid Nature (+Spd, -Atk)
- Dragon Pulse
- Surf
- Psyshock
- Calm Mind

This is the Calm Mind Set. Like any set up move pokemon, you want to send it in against a wall or a Mixed Attacker slower than Latios so you can set up a Calm Mind, take a hit, then sweep. Leftovers can be used for Life Orb, and Psyshock can be swapped with HP Fire.

Dual Screens
Breakdown (Latios) (M) @ Light Clay
Trait: Levitate
EVs: 252 HP / 4 Def / 252 Spd
Timid Nature (+Spd, -Atk)
- Reflect
- Light Screen
- Memento
- Dragon Pulse

Latios can also be used as a Dual Screener. The purpose of the Dual Screen set is to set up Reflect and Light Screen to reduce damage taken by your other pokemon that you bring in later on the the battle. You want to set up the Screen that protects you from the type of attacker the pokemon is. (Salamence, use Reflect, Latios, use Light Screen)
Then, you would use Memento to let yourself die and lower the pokemon out's Attack and Special Attack, forcing them to switch out.

Spoiler:

Checks and Counters:
Chansey is a total pain for Latios, walling Psyshock and all its other moves.
Tyranitar can kill Latios with a Crunch after withstanding a Surf with its massive Special Defense stat.
Any pokemon with a Choice Scarf has HP Ice or an Ice move with it these days, so most likely if you see any choice pokemon, swap out Latios.
If Latios is Choiced, Scizor can defeat Latios.

Teammates:
Any pokemon with Justified such as Lucario or Terrakion can take a Crunch if used by a T-tar (the T-Tar may have Pursuit, so watch out!)
A Wall is good to have if there's a choiced pokemon or a pokemon with an Ice/Dark Type move.
A usually frail but powerful pokemon that needs to set up (Haxorus) can be used well with the Dual Screen set.

Congrats on your first official! Just keep up the good work with the rest of the ones you make and you'll be fine.

You should add Ferrothorn as a potential threat as it can come in on on all non E-Belt Latios and set up Hazards/Leech Seed or kill it off with Gyro Ball.

While this one is looking well formatted, there is some work that needs to be done in a few places. Hidden power fire deserves a mention on the choice sets over thunderbolt, which in my opinion adds rather useless coverage. Trick, I believe, is also available to cripple Latios checks, like Chansey, Ferrothorn, and Ttar. Ice beam, again, adds minimal coverage. Grass types would be handled with hidden power fire, and a Draco Meteor rips through Dragon types. In fact, Draco Meteor's extreme power basically makes coverage moves only for things that resist it or have extremely high special defense. Dragon pulse should also be mentioned at the very least as an option for expert belt and choice sets. Of all the counters, I find it odd that Scizor, the number one used pokemon on Smogon, isn't mentioned. Teammates for Latios should be supporting it by sweeping or by also ripping large holes in an opponent's team. Justified is fine, but real offensive synergy is definitely needed. Double Dragoning with Haxoros, acting in a hyper offensive team, and other offensive team options need discussing. Also, if you're going to have a dual screening set, you should mention in teammates which pokemon should be used to benefit the most. The assumption that all scarfers can kill latios is a good one. If your opponent switches in a scarfer, they intend to kill you. However, it can be done in several ways besides HP Ice. If you always assume the plan is hp ice, you might end up switching into a dark move or a strong neutral hit with another team member. Latios isn't very good at supporting walls, unless they are mixed walls. (And even if it's a spoiler set, outrage should be ran over Dragon Claw on Dragon Dance Latios.)

For Thunderbolt to be good it only has to OHKO like 3 things. I have always ran it for Gyarados, and random Water Types that stall out Draco Meteor like Jellicent. It can OHKO other random crap like Sharpedo on the switch. In general I have always preferred the move, and it contributes to Bolt-Beam coverage on Scarf set. if everyone wants HP fire instead fine, but I don't think it's really that reliable. It's to kill Ferrothorn and Scizor, Scizor can revenge it at low health with bullet punch and Ferrothorn is often on Rain teams. I'm also not just talking out of my ass, I've used Latios with both moves and I'm just talking from my own experience.

My Defensive Chansey (Which is not what most dumbasses use, most players run max Sp Def max HP) Takes 40% from Specs Psyshock, I wouldn't try tricking a Chansey because I treat Latios as too important to let Chansey paralyze it, which is what would happen. Before and after tricking it, Latios still deals the same damage to it, because you're trading 150% Spa v 150% Def for 100% Spa v 100% Def. While my reasoning is short sighted and it would in fact make Chansey easier to kill later on for another Pokemon, I think Revenging Chansey at 40% health is easier than Crippling it at 100% and killing it later.

While I wouldn't like Trick in that one particular instance, I do like the move Trick on Latios and I have used it a lot. It has advantages and they're all too situational for me to try to explain, or for them to be specifically noted in the analysis. I believe the move should definitely be mentioned in the description as another choice. Trick doesn't fit my teams because I usually have another Tricker with Latios anyway, but for a lot of teams it could be very supportive.

This isn't intended to negate anything Kingtrace has said, I'm just adding my own input not discrediting his input.
